This quick and extremely easy recipe is very high in protein with no cholesterol and low fat.
I discovered this gem of a recipe when I was trying out the Ugly Vegan Kitchen's Lemony Greek Wheat Berry Salad recipe, and I found that I really enjoyed snacking on the marinated tofu! I did make a few small changes from the original recipe for an even healthier version, but you do you -- and make it however you desire.
Marinated Tofu (Vegan Feta)
Block extra firm tofu (can use firm), pressed/drained then cubed or cut into small blocks no larger than 1"x1"
½ c flax oil
⅓ c vinegar mix** (I used ACV, white wine, and rice)
2 tsp salt (for brine)
1-2 TBSP nooch
1 tsp each oregano and thyme (or Italian seasoning), pulverized in a mortar and pestle for most vibrant flavor
2 tsp fresh lemon juice
Mix everything except tofu in shallow dish (preferably with lid). Stir until salt is dissolved. Add in cubed tofu.
Refrigerate about an hour then mix well (or shake) and refrigerate another 2-3 hours. Mix well again before serving.
Serve with slotted spoon to drain from the brine.
Use in salads, caprese, pasta, or just snack on it plain like I do!
Note: This recipe is meant to be eaten cold or room temperature, and NOT heated.
** White vinegar is not recommended.
